Fennel Pollen Mead Vinegar
A tangy, mead-base vinegar fermented with wild fennel pollen creates a long, warm spice bouquet.
This Vinegar was created from yellow box honey from Moorooduc to create a mead base, fermented with local, wild fennel pollen flowers for 9 months. It was further aged and acidified for another 2 months for a total of 313 days from start to bottle.
NOTES: Five spice, Long pepper, Fennel, Quince and Rosemary flowers. This vinegar has a great length of stay in the pallet.
PAIRING: White fish, Strawberries, Tomatoes, Oranges(sweet and bitter), Parsnip, White chocolate.
A great addition to the pantry of home cooks, bartenders, low fodmap peeps or, well, anyone who likes tasty af things!
